I am having a Wednesday Spaghetti-like event on Wednesday. I belong to a national moms group called Mothers & More and we are having a gathering to meet some our newer members. I will not be serving an entire meal, but mostly appetizers, desserts and drinks. Here's one recipe I will be serving. My neighbor has a gzillion fresh tomatoes. So many she doesn't know what to do with them all so I kindly offered to take some off of her hands. YUM - fresh, off the vine tomatoes, free of chemicals. Now if I could just make my own cheese...
My mouth is watering just thinking about it!
MOZZARELLA, TOMATO AND BASIL SALAD
4 large tomatoes
2 cups mozzarella cheese
8-10 leaves fresh basil
4 tablespoons extra-virgin olive oil
salt and pepper
balsamic vinegar (optional)
- Slice tomatoes and mozzarella cheese same thickness.
- Arrange the tomatoes, mozzarella and basil, alternating in a circle around a decorative serving dish.
- Drizzle with olive oil (and balsamic vinegar if desired).
- Serve with salt and pepper to individual taste.
Bon Appetite!

Tomato, basil and fresh mozz is the ultimate dish! I like mine with balsalmic vinegar. Yummy!
I have scarfed down quite a few plates of this delicious treat with our Wed Spag host, Lora.
That is absolutely one of my favorites!! Thanks for sharing - and have fun at the gathering! :)
Fresh tomatoes are the best and the ones in your photo look AMAZING.
I've grown up on the tomato-basil-mozzarella salad and can say it is one of favorite summertime salads.
This is a yummy salad! We are growing tomatoes out here at our house in SoCal. I just harvested a bunch and make a similar salad with garden grown cucumber, avocado, feta, onions, and balsamic dressing
Yum Yum Yum

Pretty! That gives me an idea. Thanks. I'm sure my friends will love it, as well as my 9 year old. She has grown up taste.
